IntroductionI modified Alma's recipe to include some fresh veggies. I modified Alma's recipe to include some fresh veggies.
1 lb Extra Lean Ground Beef
6 oz Part Skim Mozzarella, divided
1 Bottle Bertoli Organic Olive Oil, Basil & Garlic Pasta Sauce
1 cup sliced zucchini
8 oz raw mushroom slices
1 medium red onion, sliced.
8 oz cooked pasta (I used Penne)
Spray skillet with Pam(r) then saute onion until beginning to get soft, add zucchini and continue to saute for a few moments. Add the pasta sauce and heat through.
Meanwhile cook pasta according to package instructions.
Combine meat, sauce mixture and 4 oz of Mozarella in a 9 x 12 baking dish and stir to mix. Sprinkle remaining cheese over the top.
Bake in a 350 degree oven until heated through and the cheese on top is melted.
Makes 8 servings.
