Introduction

I looked in my fridge for lunch today, and this is what came out. Tasted good enough that I'm sharing the recipe! I looked in my fridge for lunch today, and this is what came out. Tasted good enough that I'm sharing the recipe!
Number of Servings: 4

Ingredients

    1 lb chicken breast or tenders
    2 tsp olive or canola oil
    1/4 cup Kraft Light Asian Toasted Sesame Reduced Fat Dressing
    1 piece crystallized ginger, thinly sliced
    1 8 oz can bamboo shoots, drained
    4 cups fresh coleslaw
    10 oz chopped broccoli
    Szechwan seasoning to taste

Directions

Slice chicken into strips (1 tender = 2 strips, or similar size for breast meat). Heat oil in large skillet, add chicken. Sprinkle with Szechwan seasoning as desired. Add the coleslaw, crystallized ginger and bamboo shoots, drizzle it all with the dressing. Add broccoli. Reduce heat to medium, cover, and cook about 10 minutes or until the chicken is no longer pink. Good by itself, or could pack into a tortilla or pocket bread.
Makes 4 - 5 servings
