Delicious Sweet Potato Salad
2 pounds sweet potato or yams, peeled and diced into one-inch cubes
1 medium red (Spanish) onion, finely sliced or diced
1/2 large red bell pepper, finely sliced or diced
2 ribs of celery, diced
Optional: I also add a cup of cooked mixed vegetables (for variety and color)
5 Tbs extra light olive oil (I used Extra Virgin Olive Oil)
1 tsp cumin
2 Tbs wine vinegar
1 tsp curry powder
3 tsp sugar
1 tsp. Tobasco hot sauce or sprinkle with cayenne if you like it more spicy
Flat leaf parsley
Bake at 400Â° for about 15-20 minutes or just until tender. Let cool slightly
To Serve: mix well - baked sweet potato, onion, bell pepper (any other veggies) and dressing. Garnish with parsley. You can also garnish with crumbled bacon, but makes it more calories.
It is eaten at room temperature as the hot and cold combine.
Can also serve in lettuce cups - looks fabulous.
