Baked Zucchini Bites

Introduction

Much healthier than fried zucchini, these crispy little bites make a yummy snack or side dish! Much healthier than fried zucchini, these crispy little bites make a yummy snack or side dish!
Number of Servings: 6

Ingredients

    2 medium zucchini, cut into 1/4-inch slices
    1/2 cup seasoned bread crumbs
    1/8 tsp black pepper
    2 tbsp grated parmesan cheese
    2 egg whites

Directions

1. preheat the oven to 475-500 F (depending on your oven).
2. In one small bowl, stir together the bread crumbs, pepper, and parmesan cheese. place the egg whites in a separate bowl.
Dip the zucchini slices into the egg whites, then coat in the breadcrumbs. Place on a greased baking sheet.
3. Bake for 5 minutes in the oven, then turn over and bake for another 5 - 10 minutes, until browned and crispy.

    These were great. I halved the recipe because I only had 1 zucchini. I added some onion powder & a garlic/parsley salt blend. My hubby grilled some which came out really good & I baked some. The ones he grilled were crispier than the baked ones. Very, very good. Need to buy more zucchini! - 10/7/09

    Had some zukes and yellow squash already sliced so I made this on the fly and took it with us...needless to say, we both enjoyed this VERY much! My husband does NOT eat fried squash....and this he liked very much. I can't wait to try it on green tomatoes....:) Thanks for sharing. - 8/15/10

    These were FANTASTIC! I changed the recipe a bit. I used corn flakes instead of bread crumbs, one egg and just parmesan. So delicious. Next time I will throw some garlic powder in with the cheese and cereal. - 2/27/10

    These were easy to make. After they were cooked (I used my Foreman grill), we dipped ours in homemade salsa. YUM. The next time I make them, I'll try your oven method for cooking. - 8/25/09

  • These were very yummy. Bake at 50 degrees and my smoke alarm was my timer at 5 minutes then again at 5 minutes on the other side! LOL!! So, I got a little exercise running around fanning the detectors to stop their chirping! Well worth the effort! ;-) - 8/12/13
