Introduction

Number of Servings: 2

Ingredients

    Del Monte Diced Tomatoes, No Salt Added, 1.8 cup (14.4 oz can)
    Artichoke Hearts, Cento -12 oz jar
    Shrimp, cooked, 16 large (26-30/lb size)
    Ronzoni Healthy Harvest Rotini whole wheat, 4 oz
    Parmesan cheese on top (optional, not counted)

Directions

Makes 2 generous servings

Start water for pasta heating in large pot. on high. Open jar of artichokes and can of tomatoes into skillet or medium pan on medium low. If shrimp are frozen, rinse in cold water in a colander to thaw.

When pasta water is boiling, put whole wheat rotini in for 15 min. Set the table, pour water. After pasta has cooked 10 min, add shrimp to veggies to heat thru.

Mix pasta with shrimp & veggies and divide into 2 servings. Top with parmesan cheese if desired (add the calories if you do).
