Mupp's Chicken Salad

Introduction

My version of chicken salad...

I like this with a whole wheat pita and alfalfa sprouts.

I also will cut the mayo in half with nonfat plain yogurt. Try out different things! Let me know if you find someting you really like! I used the ricotta.... just because I had it!

Serving size is half a cup.

Number of Servings: 6

Ingredients

    4 cups finely chopped cooked chicken breast
    1/4 cup part skim ricotta cheese
    5 tablespoons Hellmans Lite Mayo
    1/4 chopped apple
    1/4 copped pecans

Directions

I use chicken breast tenders and boil them in water until they are cooked and no longer pink.

Finely chop chicken or use food processer.

Mix chicken in bowl with all other ingredients.

Season with pepper, cummin and Garlic and Herb Mrs. Dash or any spice you like.

  • Can I sub all the mayo with yogurt, or would that be weird? I don't like mayo, but definitely want to try this! I've never made any chicken salad before. - 7/14/08
