easy bean salad

Introduction

use any of your favorite beans and veggies use any of your favorite beans and veggies
Number of Servings: 15

Ingredients

    I use

    5 cups of beans (kidney, lima, black eyed,chickpeas, wax beans...whatever you like)
    2 cups of veggies (corn, peppers...again, whatever you like)
    1 cup finely chopped onion
    1 Tbs each of basil, thyme and oregano
    1/2 cup each of oil (olive or canola), white vinegar and granulated sugar (or to taste)

Directions

-make sure to drain the beans and any other canned item you may use (you can also cook the beans yourself...much yummier)
-mix everything in a big plastic container and refrigerate overnight (preferably but if you cant wait then dig in!!!)
-When you take it out of the fridge to eat, give it a good shake to mix the oil and vinegar before serving.
