Basic Quick Bread



Introduction

This quick bread is a very basic recipe - you could probably add lots of stuff to it!
The original recipe called for only all purpose flour, but I substitute half with whole-wheat flour. Also I only use unenriched, unbleached AP flour.

Number of Servings: 8

Ingredients

    3/4 cup unbleached all purpose flour
    3/4 cup whole-wheat flour
    1 tbsp light olive oil (or butter if you want the flavor)
    1 tbsp baking powder
    1/2 cup milk (nutrition info based on 2%)

Directions

Mix or sift together the flours and baking powder.
In a separate bowl, mix together the olive oil and milk.
Add all at once the oil mixture to the dry mixture, then stir until just combined.
Grease/spray a loaf pan and transfer batter with pan (sprinkle on oats, wheat germ, etc, if desired).
Bake in a 400 F oven until golden brown and delicious.
