1/2 cup sugar
6 tablespoons cornstarch
1/4 teaspoon salt
1 14-oz can lite coconut milk
2-1/4 cups soy milk (I prefer Soy Dream original enriched)
1-1/2 teaspoons vanilla extract
1/2 teaspoon almond extract (optional)
Sliced bananas, or fresh berries (optional)
2. Gradually stir in the soy milk and coconut milk.
3. Bring just to a boil over medium heat, stirring constantly.
4. Remove from heat and stir in the extract(s). Pour into serving dish, and place plastic wrap directly on the top of the hot pudding to prevent a skin from forming.
5. Refrigerate until chilled. Makes 8 1/2 cup servings. I like this served over sliced bananas, or fresh berries. (If you serve this over fruit, count the fruit calories, separately -- fruit is not included in the nutrition information).
