Ingredients

    4-boneless, skinless chicken breasts
    2-medium carrots, peeled
    1-stalk celery
    1/2 c.-scallions (green onion)
    1-can chicken broth
    1/4 c.-white table wine
    1/4-fresh lemon
    1-clove garlic
    1-tsp fresh thyme (or 1 1/2 dry)
    1-tsp white pepper
    2-tbsp butter

Directions

-Preheat oven to 375 degrees.
-Chop celery and carrots into 1/4 in. peices.
-Mince garlic and chop scallions.
-Place rinsed chicken breasts in a dutch oven or glass baking dish with a tight fitting lid.
-Pour all other ingredients in the dish.
-Cook for one hour and enjoy
