Mixed Warm Pasta & Salad

Introduction

This is a great lunch or light dinner! I had seen it before, but have made some changes to make it healthier and used what I had on hand. This is a great lunch or light dinner! I had seen it before, but have made some changes to make it healthier and used what I had on hand.
Number of Servings: 1

Ingredients

    2 C. Mixed Baby Greens
    2 oz. Cooked Whole grain pasta (I like to use a larger pasta)
    2 T. Fat Free Sour Cream (you can use yogurt if you prefer)
    1 T. Parmesan Cheese (I like to use the full fat version for flavor)
    2 Baby Bella mushrooms slices

Directions

Boil the pasta - approx. 8-10 min. until al dente.

Place salad greens in a bowl and add sour cream, sliced mushrooms and parmesan cheese.

Spoon in pasta and then pour approx. 1/2 C. of the pasta water. It melts the cheese and makes a creamy sauce without adding anymore calories!

Stir and Enjoy!
