Mock Lasagna

Number of Servings: 12

Ingredients

    16 oz. container of cottage cheese (1% milkfat)
    2 cups chopped fresh spinach (can use frozen if desired)
    4 large eggs
    10 oz. shredded Mozzarella cheese (divided)
    3 Tbsp. flour
    3 Tbsp. Smart Balance Buttery Spread (can use butter, but it changes the nutritional information)
    12 oz. Prego Spaghetti Sauce, any flavor

Directions

Preheat oven to 325 degrees. Lightly coat a 9 x 13 inch baking dish with olive oil cooking spray.
Mix cottage cheese, eggs, flour and Smart Balance together in a mixing bowl. Fold in spinach and half of the cheese. Spread evenly in prepared pan and bake for 1 hours. Without removing from the oven, evenly top with sauce and top with remaining cheese. Bake for 15 more minutes. Let set 10 minutes before serving. Serve hot as a main dish or cold as an appetizer.

Optional--for more flavor add 1/2 t. garlic salt and chopped onion to the cottage cheese mixture before adding spinach and cheese.
