1 boneless chuck roast, 3 pounds
1 teaspoon salt
1 tablespoon Italian seasoning
1 large garlic clove, finely chopped
1/3 cup sun-dried tomatoes in oil, drained and chopped
1/2 cup sliced pitted Kalamata of ripe olives
1/2 cup beef broth
1/2 cup frozen pearl onions
Sprinkle beef with salt, Italian seasoning and garlic. Pace beef seasoned side up in 2-to5-quart slow cooker. Spread tomatoes and olives over roast add broth and onions.
Cover and cook on low heat setting 5 to 6 hours of until beef is tender
Serve with mash potatoes
