Shrimp stir Fry

Very quick and easy, using ingredients I had in my fridge... Very quick and easy, using ingredients I had in my fridge...
Number of Servings: 2

Ingredients

    Shrimp, cooked, 6 oz
    Broccoli, fresh, 4 cup, chopped
    Baby Carrots, raw, 2 cups
    Mushrooms, fresh, 4 cup, pieces or slices Garlic, 1 tsp
    Ginger, ground, 1 tsp
    Sesame Oil, 2 1tsp

Directions

Heat sesame oil, ginger and garlic in a large frypan or wok. When ginger and garlic are heated and fragrant, add the shrimp and toss until just cooked. Remove shrimp and set aside. Add broccoli and cook until bright green (1-2 minutes). Add a splash of soy sauce and/or rice vineggar if desired. Add carrots and cook another 2 minutes. Add mushrooms and cook until mushrooms soften (add water if necessary to prevent burning). Add shrimp and toss to reheat. Serve immediately (over rice if desired).
