1 large Onion
390 grams Celery
40 floz of water
1 vegetable stock cube
1 Chicken stock cube
2 cloves of garlic
Low calorie creme fraiche
Dice Apple, Celery Garlic and onion and place in pan/pot.
Add water and stock cubes
Add chilli flakes, Herbs and ginger to taste.
Bring to boil and simmer for 30 mins.
(If using the whole amount straight away, add 3 tblspns of creme fraiche at this point )
Blitz with hand blender until smooth.
if you are going to freeze the soup, do not add the creme fraiche until you are ready to serve. 1/2 tablespoon per serving ( per 1/2 pint )
Makes 6 servings 10 fl oz (1/2 pint) each
