2 Cloves Garlic
1 Chicken Stock Cube
1 Vegie Stock Cube
2 Pints Water
Dice Potato, Apples, celery, garlic & onion and place in pot/pan.
Add water, stock cubes and herbs, chilli & ginger (to taste)
Bring to boil, then simmer for 30 minutes
If using the whole amount immediately, add 3 tblspns of creme fraiche.
Blitz with a hand blender until smooth.
This soup can be frozen but do not add creme fraiche until defrosted and ready to serve.
Makes 6 1/2 pint (10 floz) servings
