Introduction

Incredibly easy, fast, versatile, nutritious, delicious, and economical. All done in a blender. Incredibly easy, fast, versatile, nutritious, delicious, and economical. All done in a blender.
Number of Servings: 10

Ingredients

    2 1/2 cups buttermilk (fruit juice or water)
    2 eggs (opt.)
    3 T olive oil (for crispness)
    1 1/2 tsp. vanilla
    2 1/2 c. millet (brown rice or buckwheat) uncooked
    3/4 c oats
    3 T honey
    1 tsp. salt (to taste)
    3/4 tsp. baking soda
    1 T. baking powder

Directions

1. Preheat waffle iron at highest temperature or griddle at medium-high.

2. Place in a blender and blend at high speed for 4 minutes the buttermilk, eggs, olive oil, vanilla, millet, and oats.

3. Just before baking, mix in thoroughly, but briefly, the honey, salt, baking soda, and baking powder.

4. Pour straight from blender onto seasoned or sprayed waffle iron or griddle; bake about 1 1/2 - 3 minutes.

Serving Size: 2 pancakes
