112 Calorie Pumpkin Spice Cake

Introduction

Ingredients

    1 box Pillsbury Moist Supreme Reduced Sugar Yellow Cake mix
    2 TBSP Pumpkin Pie Spice
    1 can (15oz) pure pumpkin puree
    1/2 cup butterscotch chips
    1 tsp nonfat milk
    Cooking Spray

Directions

Set oven to Bake at 325 degrees.

Combine cake mix, pumkin pie spice and pumpkin until smooth. Lightly spray a 13x9inch glass pan with cooking spray and spread the batter into pan. Batter will be very think and it will take some spreading to get it to fill the bottom of the pan evenly.

Bake for 15 minutes and check center with toothpick. If it comes out clean remove from oven and cool. If not, bake for 5 minutes more and check again until done.

Let cool for 30 minutes.

Microwave butterscotch chips and 1 tsp nonfat milk in a glass measuring cup or small microwave safe bowl for 30 seconds, stir, microwave in 10 second incriments until about 1/2 way melted then just stir to melt the rest of they way.

Drissel melted chips over cooled cake. Cut into 12 squares then cut each square on the diagional to make 24 triangles.

Makes 24 servings.
