Breakfast Casserole




Number of Servings: 8

Ingredients

    one large baked potato with skin, diced
    1 large green bell pepper, diced
    1 cup diced ham
    3 pre-cooked sausage links, sliced
    1 cup shredded colby cheese
    1 cup nonfat milk
    1 tsp italian seasoning

Directions

Mix together first four ingredients in large bowl. Set aside. In medium bowl, whisk together eggs, milk and seasoning. Fold in cheese. Pour egg mixture into large bowl. Stir well. Coat preheated skillet with cooking spray. Pour in mixture. Over medium-high heat, stir for about five minutes. Lowering heat to low and cover. Simmer for 15 minutes. Makes 8 servings.
