IntroductionThis is a slighly healthier version of the classic oatmeal cookie. I do not care for raisins as in traditional oatmeal cookies. This recipe will work the same adding 1 cup of raisins. 1 cup Smart Balance Buttery Spread
1 cup Brown sugar, packed
1 Egg (large)
1 tsp Vanilla
1.5 cups All-purpose Flour
1 tsp Baking Soda
.25 tsp Salt
2 cups Quick-cooking rolled oats (not instant)
3 tbsp Flax Seeds
Add four, baking soda and salt. Mix until no dry flour remains.
Add oats and flax seeds. Mix well. Drop 1 tbsp each about 2 inches apart onto greased cookie sheet. Bake at 350 for 8 to 10 minutes until golden.
Makes about 3.5 dozen (42) cookies.

Made these tonight, with a few changes:
1. Used 1 cup of honey almond granola instead of 2 cups of rolled oats.
2. Used 2 Parkay marg.sticks (1 cup) instead of buttery spread.
3. Tried to chop/grind flax seeds with my Sunbeam Oskar Jr. - didn't cut a single seed.
