Mexican Casserole

Ingredients

    1 lb extra lean ground beef, crumbled/cooked/drained
    1 packet taco seasoning
    1 can Rotel tomatoes (regular can, not large)
    1 can whole yellow corn
    2 cans Ranch-Style Black Beans
    12 jumbo black olives, sliced
    1/2 cup white or green onions, chopped
    1 cup shredded Colby and Monterey Jack cheese
    2 ounces (2 servings) plain tortilla chips, broken into small pieces

Directions

In a large skillet or wok, crumble, brown, and drain ground beef. Add taco seasoning packet (and water as directed on label). Add Rotel tomatoes, corn (drained), black beans, onions, and olives. Simmer for 15 minutes or till thoroughly heated. Add half of the cheese and all of the broken tortilla chips and stir well. Transfer to large casserole dish and cover. Place in 400 degree oven for 45 minutes. During the last 5 minutes, uncover and sprinkle remaining cheese on top to melt for 5 minutes. Remove from oven, let stand 10 minutes, serve. Makes 12 servings.
