Low Sodium Chili

Ingredients

    1 c dry Black Beans
    1 c dry Light Red Kidney Beans
    1 c dry Pinto Beans
    1 c dry Small Red Kidney Beans

    10 oz ground Beef 93% Lean
    8 oz Turkey, Ground turkey, 93% lean

    6 c chopped up Red Ripe Tomatoes
    2 c (1 large) chopped White Onion
    1 c chopped each Green Peppers, orange peppers, Yellow Peppers, and red peppers
    6 oz HuntsTomato Paste, No Salt Added
    1 c Chi-Chi's Fiesta Salsa, Medium
    1 c Water
    3 Tbsp Garlic
    1/2 Tbsp dried Cilantro, dried
    1 tsp black Pepper
    1/2 tsp dried cumin
    1 tsp dried Marjoram
    1 Tbsp Chili powder
    1/2 Tbsp cayenne powder

Directions

Soak beans, soaking black beans seperate, overnight. Rinse well & drain. KEEPING black beans seperate, cover with double water, cook black beans about 30 minutes, the other beans about 15 minutes. Drain. Put beans in crock pot.
Brown ground beef/turey. Add to crockpot.
Add remaining ingredients, stir together, set on low 6 hours.
serving size = 1 cup

  • I make a VERY similiar Chilli but I don't use salsa or tomato paste. I do however use 1-2 finely chopped jalapeno peppers and I use all the same seasonings but I use "no-salt" a salt substitute that has NO SODIUM and tastes great! Each serving has only 73.5 mg of sodium. - 5/7/08
