Ingredients

1 cup uncooked white rice
1 tsp. margarine
1 clove garlic minced
1 tsp. grated lime zest
1/4 tsp. black pepper
2 cups chicken broth
2 tbsp. chopped fresh cilantro
juice of 1 lime
Directions
Combine rice, margarine, minced garlic, pepper, and broth in a saucepan . Add about 1 tsp. of grated lime zest. Bring ingredients to a boil. Reduce heat to low and cover with a tight fitting lid. Simmer for 30 minutes. Stir in chopped cilantro and add squeezed lime juice.
