Low carb Meat Loaf

Introduction

I put this recipe together after I had Lap Band surgery to keep it low carb and low cal. I put this recipe together after I had Lap Band surgery to keep it low carb and low cal.
Number of Servings: 8

Ingredients

    1 lb 93% Lean ground beef
    2 large eggs
    1/2 cup Progresso Bread Crumbs, Italian
    16 oz can diced tomatoes
    1 cup Red Bell Pepper
    1/2 TSP Salt
    1/2 TSP Pepper
    2 green onions finely chopped

Directions

For kid friendly recipe(to hide the veggies), blend red pepper, green onion, and tomatoes together until it makes a puree. Pour 3/4 of puree into bowl with the rest of the ingredients, and mix together. Put loaf in to a baking pan and pour rest of puree on top of meat loaf.

Bake 375 for one hour or until core temp reaches appx 170 degrees. Makes 8 servings
