Italian Chicken

Number of Servings: 4

Ingredients

    4 chicken thighs
    1 tsp. black pepper
    2 cloves garlic, minced, chopped or sliced
    1 cup green peppers, seeded, deribbed and sliced
    1 cup red peppers, seeded deribbed and sliced
    5 medium mushrooms, sliced
    12 oz. baby carrots (about 36 carrots)
    4 potatoes, quartered
    3 tsp. italian seasoning
    about 1 cup water to help steam the veggies


Directions

Cut off any excess fat from meat. Coat pan with cooking spray. Season meat with pepper and 1 tsp of italian seasoning. Brown in pan. Add garlic, red and green peppers, mushrooms, and saute til soft. Surround with carrots and potatoes. Add water. Sprinkle with remaining 2 tsp. italian seasoning. Cover and bake at 350 degrees til chicken is done.
