Summer Cucumber Salsa

Introduction

A new twist on salsa, for using cucumbers from the garden! A new twist on salsa, for using cucumbers from the garden!
Number of Servings: 6

Ingredients

    3 medium-large cucumbers
    3 small-medium tomatoes
    1 green bell pepper
    1/2 cup red onion
    2 jalapeno peppers
    2 Tbsp minced cilantro
    2 Tbsp minced fresh dill
    3 squeezes of lime juice (either from wedges or a lime-bottle)

Directions

(20 minute prep-time is for chopping up all the ingredients.)

Peel cucumber (if desired- you can leave the peel on if you prefer- I usually do, or at least leave some of it). Remove seeds from cucumber and discard, and chop remaining cucumber flesh into small pieces.
Remove seeds from tomatoes and discard. Chop remaining flesh into small pieces.
Remove seeds from bell pepper and discard. Chop bell pepper into small pieces.
Remove seeds from jalapeno peppers and chop into very small pieces (or mince).
Chop red onion into small pieces.
Mince cilantro and dill.

Combine all chopped veggies in a large bowl.
Add cilantro and dill and mix together well.
Add a few squeezes of lime juice and mix together again.

Serve with your choice of tortilla chips (not included in nutritional information). I use baked chips to make the recipe a little more healthy. I've found this salsa tastes great on baked "Scoops" chips, or corn tortilla chips with the "hint of lime" flavor. It especially worked well when I served it with Mango-Peach baked fruit chips!

    This was so good! I used english cuke, no hot peppers, and added some salt/pepper. I used dried parsley and dill. It made alot, but I will use it to top salads. The dill was a pleasant surprising taste - wouldn't have thought of it. I will definetely make this over and over!!! - 5/26/09

    This is good stirred into sour cream for a topping on grilled salmon...or add some garlic, chili powder, and cumin for more of a Tex-Mex flavor. I also liked it just as written, but with a little garlic added. - 6/30/08

    I was surprised it didn't get too runny after setting a few days. It made so much for 1 person, but its been as good on day 5 as it was to begin with. Maybe better.

    Just made this - the flavor is good, although next time I will make it with half of the jalapenos. This recipe made an exceptional amount, much more than 6 servings. I wish I had halved it. I added extra cilantro and dill and really enjoyed that flavor. - 7/18/09

    I made this for the 4th and everybody loved it. I took out the dill and used an avacado. We ate them with tortilla chips and even used it as a spread for the hotdogs. It's a great alternative to regular salsa and you can pair it up with all kinds of meat. Can't wait to make this again. - 7/8/08

    I was really disappointed with this, especially since I love cukes and the ratings were all so good. It smelled awesome, but the taste was lacking. I think the cucumbers really nuetralized the taste of the peppers and onions. It was okay, but I won't make it again. - 12/10/08

    THis is fantastic. It makes a huge amount. If you don't want as spicy only do 1 jalapeno. Add some garlic too. I used it in my omelet and it was so yummy! - 7/31/09

    I make a variation of this almost everyday- leaving it in a Tupperware in the fridge to snack on instead of something else. It does get a little wet (expells its moisture), but I add Asian Five Spice Seasoning and use it makes its own calorie free dressing. A large serving of something like this is - 6/30/08

    I made this last night without the onion(didn't have it) or the bell pepper (don't like them). Did add some garlic to it though. Tried it witha few chips. Pretty good! Going to have it tonight with enchilada's & salad for cinco de mayo! I like the idea of chili powder & cheyanne too, will try that. - 5/5/10

    I have always wanted to try making my own salsa, but I do not know how to buy jalapenos or cilantro, so I have not yet tried to make it...adding the cucumbers and green peppers sound wonderful.     It would be nice to know the actual size of a serving. Because the size of fresh vegetables differ so much, one can never be sure how much a serving is. Would this serving size be a 1/4 Cup, 1/3Cup, 1/2 Cup, 1Cup per 44 calories? - 7/10/09

    nice summertime or wintertime salsa,hubby loves it on his homemade meat pie turnovers.We also call it "pico de gaio"here in the mexican restaurants of course there is no cucumber added but it is still quite good.We love cucumbers so will try this recipe. - 12/29/09

    It sounds good since I am a cuke fan...as for Oregongrandma jalapenos are easy to pick if they have age lines (kinda like white lines) the hotter they are also red ones too. As for cilantro its like using parsley but better!! I will diffently give this a go!! - 8/8/09
