Pineapple Roll

Number of Servings: 15

Ingredients

    1 cup sifted flour
    1/8 teaspoon salt
    3/4 cup egg subsitute
    1/2 cup sugar
    1/2 lite butter, melted, cooled
    1 14 oz can crushed pineapple, with juice
    1 package fat free/sugar free vanilla pudding mix
    2 cups fat free whipped topping

Directions

Pre heat oven to 375. Grease 15 x 10" jellt-roll pan with non-stick spay and line with wax paper.
Grease and flour paper. Sprinkle a think, cotton kitchen towel with 1/2 cup powdered sugar, set aside.
Prepare Cake:
Combine flour and salt in small bowl, Beat eggs in medium sized bowl until foamy. Gradually add sugar. Beat until very light and fluffy. Stir in flour and salt. Lightly fold in butter. Quickly pour batter into prepared pan, spreading evenly.

Bake for 9 to 10 minutes or until top of cake springs back when touched. Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, staring with narrow end. Cool completely on wire rack (if not cooled completely, cake will be difficult to roll).

Prepare Filling:
Combine pineapple with juice and vanilla pudding mix, Add whipped topping.

Fill cake:

Carefully unroll cake, remove towel. Spread filling over cake and carefully re-roll. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with 2 tablespoons powdered sugar before serving.

Makes 15 -1" slices.
