Summer Sweet Potato Salad

Introduction

Fantastic and quick. Make ahead and eat all week. Fantastic and quick. Make ahead and eat all week.
Number of Servings: 6

Ingredients

    2 medium sweet potatoes or yams cooked and cubed
    1/2 c. dried cranberries
    1 small red onion
    1/3 c. chopped almonds
    2 Tbsp fresh parsley

    Dressing:

    4 Tbsp olive oil
    2 Tbsp rice vinegar
    2 tsp. dijon mustard
    salt and pepper to taste

Directions

Serves 6.
Cube sweet potatoes, then cook (boil or microwave) until tender. Stir in all other ingredients. Chill and serve.

  • I made this tonight & it was pretty good. I didn't have any parsley so I used some chives I had on hand. I think this is something I could see myself making frequently for a good healthy salad that is a change of pace. - 5/24/12
