Vegetarian Taco Soup!

Ingredients

    a normal sized can of sweet corn
    a normal sized can of red beans
    a normal sized can of Black beans
    a normal sized can of jumbo olives
    a BIG can of stewed tomatoes
    a little bitty can of green chilies
    a packett of taco seasoning
    half an onion, chopped up.
    reduced fat sour cream
    Cheese

Directions

SUPER EASY! chop up half an onion (and red pepper or green pepper if you dare) and put a little water in a pan and soften them on med-high heat.

take all vegetables and open up the cans, and dump all juices and veggies into a big pan. add onions and peppers if you have them. add a packet of taco seasoning, stir, and continue heating.

serve in bowls with a tablespoon of reduced fat sour cream, and a 1/4 cup of cheese on top. you can add tortilla chips, but that ups the calories. one serving is about two large bowls full of the soup-- about 2 cups or 2 1/4 cups per bowl?
