4 cups fat free ricotta, processed in food processor until very smooth 1 cup sugar 2/3 cup sour cream 2 T. vanilla 5 eggs
In a large mixing bowl combine ricotta, sugar, sour cream, and vanilla. Beat well. On low speed and eggs one at a time, beating just until mixed. Pour into a greased 8" spring form pan. Place aluminum foil on the outside of pan and place into a slightly larger baking pan. Place in oven and fill second pan with hot water. Bake at 200 degrees for 8 hr. exactly. Remove from oven and cool on a wire rack for several hours. Serve plain or with a little raspberry sauce. makes 12 large servings.
