Introduction

Ingredients

    12 oz uncooked macaroni, elbow-type
    1/2 cup fat-free sour cream
    12 oz fat-free evaporated milk
    8 oz low-fat cheddar or colby cheese, shredded
    1 Tbsp Dijon mustard
    1/4 tsp table salt
    1/4 tsp black pepper
    1/8 tsp ground nutmeg
    2 Tbsp dried bread crumbs
    2 Tbsp grated Parmesan cheese

Directions

Preheat oven to 350F.
Cook pasta according to package directions without added fat or salt; drain and transfer to a large bowl. While pasta is still hot, stir in sour cream; set aside.
Heat milk in a small saucepan over medium heat until tiny bubbles appear just around the edges (known as scalding). Reduce heat to low, add cheese and simmer until cheese melts, stirring constantly with a wire whisk, about 2 minutes; remove from heat and stir in mustard, salt, pepper and nutmeg.

Add cheese mixture to pasta; mix well. Transfer to a 3-quart casserole dish.

Combine bread crumbs and Parmesan cheese; sprinkle over pasta.


Bake until top is golden, about 30 minutes. Yields about 1 cup per serving

    I looked at the nutritional info -- seemed WAY OFF to me. So, I entered the ingredients into the recipe calculator and they WERE way off! Calories weren't 165.7 -- they were 261.3! Carbs weren't even close to 16.6 g -- they were 41g! Next time, won't put in Dijon Mustard. - 5/22/08

    Great Recipe. But the calories were way off for me. I did make some minor changes. I used 10 oz of cheese instead of 8, RF sour cream and RF Ritz crakers instead of bread crumbs & Brilla Plus Pasta. I only got 6 servings at 1 cup a serving. My calories were 322, carbs 36, fat 8, & protien 25 - 5/22/08

    This is actually a Weight Watcher recipe. I have been making it for years and my husband loves it. One thing I do different however is reduce the mustard. 1 Tbsp was way too much for my family. But I do not suggest leaving the mustard out altogether as it helps give the dish some sharpness. - 6/16/09

    I added 1/2 cup more milk as I thought it was dry. I wish I would have added even another 1/2 cup.

    I added some extra sour cream and a couple of tablespoons low-fat cream cheese to mine, then covered it when baking. This kept it from being dry and added a creaminess to it. Almost as good as moms! - 2/20/09

    Made this last night and my daughter loved it, but not my son. I didn't have dijon mustard so I put in spicy brown mustard. It was good and I'll make again but I will reduce the mustard to a tsp, add more milk and cover when I bake. - 2/17/09

    I thought this recipe was pretty tasty. I took some of the other comments suggestions and used celery salt instead of regular salt and ricotta cheese (part skim) instead of sour cream. I will definitely make this again! - 6/16/09

    For those of you who found it a little bland or dry, add a little extra sour cream and some paprika, the paprika with the mustard is great and the extra sour cream helps it to taste more creamy ~ worth the few more calories to me. - 6/4/09

    I made this for my husband and I last night, and he really liked it. I thought it was ok. It needs something a little extra, I'm just not sure what that is.     Used whole wheat elbow mac, cheddar & mozz cheeses, added diced tomatos & shredded carrots, Ritz reduced fat crackers in leu of bread crumbs, garlic herb seasoning to top & extra sprinkling of cheeses to top.     IT was bland and grainy. Not my favorite low-cal dish but thanks for the suggestion. It makes for a good base. I think it gets grainy if you keep the milk on the heat too long, it needs to be cheesier too. - 5/18/08

    This was an okay compromise if you want mac-n-cheese but it was a little dry even with an extra half can of milk and you really need to check the calories with your ingredients cause it was wrong by my calcualtions. - 10/8/08

    Of course I think it could have been cheesier (or even more flavorful), but I'm sure that would take the healthiness away from it. The nice thing is I froze the many leftovers for my husband and I to take for lunches. It's not bad... and we'd probably make it again. - 5/29/08

    Definitely a keeper! I was out of macaroni, so I used rotini instead, and it made a "fancy" dish. I also divided the recipe into two 8" square casserole dishes, 4 servings for one meal, 4 servings to freeze. - 5/23/08

    I tried this tonight. My 3.5 year old daughter loved it! She scarfed it down! She actually ate all of her dinner! She usually says she is full at dinner then not much later says she wants this or that...I think she only says she is full cause she just doesn't want to eat what is on her plate! picky! - 5/21/08

    It was okay. I guess i am just used to different kind of mac and cheese. I followed the directions to a T and still the top layer of the mac and cheese got rubbery. i could of used a layer of this cheese to keep the noodles from getting burnt. Maybe will make again. - 5/20/10

    Yum! Based on other reviews, I added a tbsp fat free cream cheese and an extra tbsp fat free sour cream. I also used whole wheat macaroni and whole wheat Italian style bread crumbs. I sprayed no cal butter spray over the crumbs and loosely covered with tinfoil to bake. Kept it moist and creamy - 2/15/10

    I thought that 2 minutes wasn't enough for the cheese to melt properly. Also, I used shredded almonds instead of breadcrumbs, which turned out amazing. The recipe turned out amazing, looked beautiful and was delicious. All my friends loved it. Good job! :) - 12/6/09

    I tried this tonight for dinner. Found it very easy to make but the sauce seemed a little thin. I may try to thicken it next time with flour or dried milk powder. I used Panko bread crumbs and I think they were too dry. The taste was great - I'd never seen the addition of nutmeg before. - 11/5/09

    It was good, not great. I couldn't get the low-fat cheese to melt into the milk. Even after 8-10 minutes, it just remained a soft glob of cheese, so it wouldn't mix well with the pasta. The flavor was good, but since the cheese wouldn't cooperate, I probably won't make it again. - 7/6/09

    I might try this, but mixed reviews and uncorrected info throw me off a bit. People looking for creamier, cheesier pasta could try adding pureed/mashed cottage cheese for the sour cream (maybe drained like yogurt cheese) and trading another type of cheese for the cheddar like gouda or monterey jack. - 12/31/08

    I'm going to try this recipe tonight, but am going to add fire-roasted garlic diced tomatoes and chicken breast strips to really make it a nice full meal. - 2/25/09
