1 large ripe tomato
1 clove garlic, minced
1 tsp olive oil
1 T fresh parsley, chopped
1/4 c parmesan
1/4 c seasoned bread crumbs
salt and pepper to taste
Cut tomato in half horizontally. Gently squeeze out seeds. Scoop out pulp and chop. Put pulp, garlic, oil, parsley, cheese and bread crumbs in a bowl and toss together.
Place tomato halves in baking dish, cut side up, and season with salt and pepper. Fill tomato shells with filling and bake in oven for 20-25 minutes or until tomatoes are tender and top is lightly browned.
Makes 1 generous serving.
