Chicken and wine sauce

Introduction

Great chicken dish that can be served by itself or over rice. Great chicken dish that can be served by itself or over rice.
Number of Servings: 4

Ingredients

    4 chicken breasts, deboned and skin removed
    1 tbsp olive oil
    1 large onion, chopped
    1 cup fresh sliced mushrooms
    2 tbsp dried basil
    2 tsp minced garlic
    1 cup fat free chicken broth
    1/4 cup white wine

Directions

Heat oil in large skillet. Add chopped onion, mushrooms, garlic and basil. Saute until onion is slightly translucent. Add chicken broth and wine. Bring to a boil. Add chicken, bring back to boil then reduce heat. Cover and simmer until chicken is 160-180 degrees (about 40 minutes). If you like thicker sauce, mix 1 tbps cornstarch and 2 tbsp cool water then add to sauce, stirring until thickened. Makes 4 servings.

  • This is a fabulous recipe. Instead of dried basil I used 5 large fresh leaves. Everything tastes better with fresh herbs. Also, because I didn't have chicken broth on hand, I used beef broth and it stilll was amazing. I laid the chicken on top brown rice and the flavour was lovely. - 9/25/11

  • This was great and very easy. I browned the chicken first. I also added 3 oz of ff cream cheese to the sauce. I will definately make this again. - 3/17/08
