Fruit Slaw

Number of Servings: 4

Ingredients

    1 8oz can pineapple chunks (juice pack)
    2 c shredded cabbage
    2/3 c chopped apple
    1/2 c shredded carrot
    1/4 c chopped green pepper
    1 T cooking oil
    1 T honey
    1 T lemon juice
    1/8 t ground ginger

Directions

Drain pineapple chunks, reserving 2 T juice. Set juice aside. For salad, in a large salad bowl combine pineapple, cabbage, apple, carrot, and green pepper.

For dressing, in a screwtop jar combine reserved pineapple juice, oil, honey, lemon juice, ginger or gingerroot, and 1/8 t salt. Cover and shake well to mix. Pour dressing over salad. Toss lightly to coat. chill 4 to 24 hrs. Toss before serving. Serve with slotted spoon. Makes 4 servings.
