Summer Couscous Salad

Introduction

Very tasty serve with chicken or shrimp skewers. Great even on it's own. Very tasty serve with chicken or shrimp skewers. Great even on it's own.
Number of Servings: 16

Ingredients

    150 grams finely chopped seedless cucumber
    250 grams finely chopped fresh tomato
    50 grams very finely sliced red onion
    2 cups chicken broth
    2 cups uncooked couscous
    10 tbsps olive oil
    10 tbsps vinegar
    1 tsp Italian herb mix
    2 cups red kidney beans

Directions

Boil chicken broth, add couscous, set aside for 5 minutes.
Mix oil, vinegar and Italian herb mix and set aside
Combine all other ingredients
Stir in 1/2 oil, vinegar, herb dressing
Fluff couscous with fork then stir into mix of all other ingredients
After mixing well, add the remainder of the dressing and stir until all is coated well

Store in refrigerator and serve when ready.
