Introduction

This is based on those layered, spinach filled triangles called spanakopita. This version is made with broccoli. Number of Servings: 14

Ingredients

    2 Cups cooked chopped broccoli, well drained
    8 oz low fat ricotta or cottage cheese
    1 Cup grated Cheddar
    1 Large egg
    1/4 tsp Pepper
    14 sheets phyllo dough
    1/2 Cup Olive Oil

Directions

Pre heat oven to 350 degrees. Stir together the broccoli, cheeses, egg, and pepper in a bowl.

Lay a sheet of phyllo horizontally on a work surface. Then brush the bottom side with olive oil. Fold the top part down to make the sheet in half horizontally. Brush with more oil.

About 1 inch in from the folded edge mound 2 Tblsp of mixture in a line. Make sure it is a line and has 1 inch all the way around it. Roll the folded edge of dough over the filling. Roll it like an egg roll.

Transfer to a greased cookie sheet, seam side down and brush with more oil.

Bake 20-25 minutes Serve right away
