Shrimp Florentine w Roasted Garlic

Ingredients

    Cooking spray
    10 cloves garlic
    salt - abt 1 tsp
    1 tsp olive oil
    8 oz peeled and deveined shrimp
    1/2 cup chopped sweet red pepper
    1 tsp butter
    1/2 cup half-n-half (fat-free is good)
    1/3 cup chicken broth (fat-free)
    1 oz. shredded or grated Parmesan cheese
    salt
    pepper
    cayenne pepper (if desired)
    Pasta - 4 oz uncooked or 2 cups cooked. We like to use penne rigatte, but any pasta will do.

Directions

Cooking spray
10 cloves garlic
salt - abt 1 tsp

Combine these ingredients, put in pan and into 350 degree oven and roast for abt 25 minutes, just until garlic is light brown. Remove and set aside.

1 tsp olive oil
8 oz peeled and deveined shrimp
1/2 cup chopped sweet red pepper

Heat oil in skillet, then add shrimp and cook until pink. Remove shrimp, then cook pepper until just beginning to turn soft, but is still crispy. Remove pepper to shrimp bowl.

1 tsp butter
1/2 cup half-n-half (fat-free is good)
1/3 cup chicken broth (fat-free)
1 oz. shredded or grated Parmesan cheese
salt
pepper
cayenne pepper (if desired)

Use these ingredients to make sauce. Melt butter, add everything else and mix well until cheese melts. If thickening is desired, add a little cornstarch with some broth and thicken.

Pasta - 4 oz uncooked or 2 cups cooked. We like to use penne rigatte, but any pasta will do.

When sauce is done, add spinach to pan. Then add shrimp and pepper, then the roasted garlic (which is better mashed up). Add the hot pasta and stir everything together. Salt and pepper to taste. Cayenne pepper can be used on shrimp while they are cooking for a nice spicy taste.

  • Although a bit of work to make, my husband did LOVE this dish. I did add the Cayenne pepper for some spice. I found the roasted garlic a bit hard to work with but worth the flavor. Had a friend eat over who does not love seafood and loved this dish also. - 11/11/08
