Ingredients

    1 pkg firm tofu, rinsed and drained
    1/4 C packed, shredded fresh basil
    1/4 C chopped Italian parsley
    2 T finely chopped red onion
    2 T fresh thyme leaves
    2 cloves garlic, minced
    1 T EVOO
    1 tsp fresh lemon juice
    1/2 tsp sea salt
    1 tsp freshly ground black pepper

Directions

Combine all gredients in food processor. Pulse several times until well-blended. The mix should be crumbly.
