Introduction

This is a favorite at my house. It's not the healthiest but once in a while it's o.k. I usually serve it with a tossed salad. This is a favorite at my house. It's not the healthiest but once in a while it's o.k. I usually serve it with a tossed salad.
Number of Servings: 4

Ingredients

    cheese sauce-
    4 Tbsp butter
    4 Tbsp flour
    2.5 cups milk- heated
    salt & pepper
    1 cup grated cheddar cheese
    2 pinches of cayenne pepper

    Mac and Cheese-
    1/2 pound macaroni- cooked
    2 cups Cheese Sauce
    1/2 cup grated sharp cheddar cheese
    1/2 cup bread crumbs, seasoned

Directions

Cheese Sauce-
Melt butter in a heavy sauce pan. Stir in flour and cook, stirring constantly, until the paste cooks & bubbles a little, DO NOT BROWN, about 2 minutes. Add milk, continuing to stir as the sauce thickens, pring to almost boiling. stir in salt and Pepper to taste and add cayenne pepper & grated cheddar cheese. Bring to boil & remove from heat. Makes 2 cups

Mac and Cheese-
Preheat oven to 375 degrees F.
butter a 1 1/2 quart casserole. Put cooked macaroni into the casserole, pour the cheese sauce over it, & mix gently. Sprinkle grated cheese over the top and spread bread crumbs over the cheese. Bake, uncovered, until top is golden and the sauce is bubbling, about 30 minutes.
