Introduction

A sure family favorite! Make it the night before and pop into the oven when you wake up. A sure family favorite! Make it the night before and pop into the oven when you wake up.
Number of Servings: 1

Ingredients

    12 ounces light (50% less fat) breakfast sausage
    1 teaspoon poultry seasoning
    4 1/2 cups whole-wheat bread cubes
    8 ounces shredded reduced fat sharp cheddar cheese
    1 teaspoon mustard powder
    2 large whole eggs
    4 egg whites OR 1/2 cup egg substitute
    2 cups low fat milk

Directions

1. Crumble sausage into a medium nonstick skillet. Cook over medium heat until nicely brown, breaking up into bits with spatula as it cooks. Sprinkle with poultry seasoning. Coat a 9 x 13 inch baking dish with canola cooking spray and set aside.
2. Add sausage to large bowl along with toasted bread squares, cheese, mustard powder and salt, if desired. Add whole eggs, egg whites (or egg substitute) and milk to mixing bowl, and beat on medium-low speed until smooth and completely blended.
3. Drizzle egg-milk mixture over the sausage and bread mixture; stir to blend. Pour into the prepared baking dish, spread top evenly, cover with foil, then chill in the refrigerator for 8 hours or overnight.
4. Preheat oven to 350 degrees and bake, covered in foil, for 45 minutes. Uncover the foil, and reduce the temperature to 325 degrees. Bake for about 20 minutes longer or until set.

Makes 8 servings.

    you can also put this in the crock pot ( I have an oval one) add Veggies of choice and cook on low over night. Yummy in the AM - 4/12/09

    I too make this Christmas Eve and pop it in the oven for while opening presents. BUT I add a 1 half cup of sliced green onion, or white onion, half a red pepper diced and sliced mushrooms on top. Or chopped spinach. Gotta get in those veggies!! Plus it tastes better! - 1/1/09

    I make this using the peppers, onions, etc (veggies!!!) but I also substitute 2 cups cottage cheese blended smooth with 2 or 3 eggs) and only sprinkle shredded cheese on top. Still get cheesy flavor without as many calories but gives added protein. And use 1/2 the bread. - 9/25/09

    I made this for Thanksgiving morning and it was great! My whole family loved it. I caught my hubby in the kitchen nibbling on left overs! lol I served it with some fresh fruit. I personally thought it was better the next day when we warmed it up for a brunch!! Thanks for sharing!! - 12/24/08

    I make a similar casserole and it's great for making substitutions with (ham, mushrooms, onions, peppers, etc.) Sometimes with a little cheese sprinkled on top before cooking as well. It also reheats great in the microwave. - 1/24/09

    I have made the regular, high calorie version of this recipe for years. It works great for holiday mornings. I usually add green onion, mushrooms and sometimes spinach. THANK YOU for posting a lower cal / fat way to make one of my favorites! - 1/24/09

    I make this using the frozen hashbrowns in place of the bread, skip the cheese, and load 'er down with veggies. My son in law made this for me, and I have loved it ever since. Eating it is like having breakfast with him! - 9/25/09

    I made this with bread crusts for the bread cubes (didn't measure -- just covered the bottom of the pan). It was very delicious and filling. I think next time I might substitute the meat with broccoli. - 1/4/09

    What a great idea. I did make a few minor changes that made this much healthier!
    Ground Turkey (97% lean) for sausage - HUGE calorie and cholesterol savings,
    definitely used Egg Substitute,
    Non Fat Milk instead of 1% milk

    I substituted a few items for what I had in the fridge. Turkey sausage, fresh broccoli, mushrooms, and egg beaters garden vegetable mix. Then added ricotta cheese for texture, and hot pepper sauce, pepperjack cheese and crushed peppercorn for heat. Everything else I did per the recipe. Very good. - 12/8/09

    This was really good, one of the best breakfast casseroles I've ever made! I found a very low fat turkey sausage, so I used a little more, added some spinach and used whole wheat croutons. Just delicious! Recipe made at least 10 servings! - 9/27/09

    Very good. Tasty and filling, very satisfying. For the one who thought it was a single serving -- rethink your serving sizes, remember that restaurant servings are 2 or 3 times a normal serving. Serve with coffee, milk or juice and a serving of fruit. - 4/9/08

    Delicious recipe. Breakfast casseroles are such a versatile meal. Because I use whatever ingredients I have available at the time, my casseroles differ (however slightly) whenever I make them. I may use biscuits instead of bread, add a layer of hash browns, use ham/bacon, or add onions/mushrooms. - 10/13/09

    Who has time to bake breakfast for 65 minutes before eating? We get up at 3 am so hubby can get out the door by 3:40. It's a quick, pre-made breakfast burrito for him. Pop in the microwave for a minute while I pour coffee. - 1/24/09

    Frugalistas will avoid using and tossing aluminum foil and use / reuse another dish of the same size for the top. Can't recall when I've bought either foil or plastic wrap. A plate works as a short term storage top for a round pan. - 10/13/09

    I can't unfortunately, my only problem with diets are, I don't like cheese at all and I'm allergic to Sausage/chorizo. I like how it sounds but I wish they would give 2nd meat alternatives and something to replace with cheese. - 10/14/09

    I cut the recipe in half to make 4 portions (will freeze 3 for later). I added 1oz red pepper, 1oz chopped onion and some frozen spinach. Next time I think I'll cut back on the bread and use a lower fat sausage (like turkey). I did maths on my ingredients and it actually came to 469 cal! Whoops! - 7/31/13
