Skillet Potatoes and Ham

Introduction

A quick, simple skillet lunch for one. Double/quadruple it for a dinner. Add veggies and change out the meat as you choose. A quick, simple skillet lunch for one. Double/quadruple it for a dinner. Add veggies and change out the meat as you choose.

Ingredients

    Olive Oil
    Red Potato ( 200g, 1 medium )
    Onion ( 50g )
    Ham, extra lean, (5% fat), 100 grams
    Salt and Pepper to taste
    (Options)
    Green pepper, seasonal veggies
    Some of Garlic or garlic powder, paprika, Italian seasoning, seasoned salt.

Directions

Spray a small iron skillet (8" for a single serving) with olive oil and preheat to medium. Peel and dice potatoes to the desired size, add to pan with salt and pepper, and cook (covered) for 10 minutes. If desired, lightly spray with oil before covering. If you use optional veggies that are hard, add them here.

Meanwhile, chop the desired amount of onion or softer optional veggies. When the first 10 minutes are up, use a spatula to scrape the potatoes loose from the pan. Add the softer veggies on top and cook ( covered ) for 10 minutes.

Meanwhile, chop/dice ham or any fully cooked add-ins that just needs to warm up. When the second 10 minutes are up, use a spatula to scrape the potatoes loose from the pan. Add the final ingredients and cook for a final 10 minutes. Serve.

DO NOT DISTURB except at 10, 20, and 30 minutes. Potatoes need their privacy!
