Introduction

A lovely side salad for any entree. Spinach is not only a terrific source of eye-nourishing lutein but is rich in potassium as well. A lovely side salad for any entree. Spinach is not only a terrific source of eye-nourishing lutein but is rich in potassium as well.
Number of Servings: 4

Ingredients

    4 cups fresh spinach, shredded
    1 cup jicama, cut into thin strips
    1/2 cup mushrooms, sliced
    2 tablespoons flaxseed oil
    1 tablespoon lemon juice
    1/8 teaspoon garlic powder

Directions

In a large salad bowl, comine spinach, jicama, and mushrooms and toss lightly. Mix flaxseed oil, lemon juice, and garlic powder in a jar, cover, and shake well. Pour dressing over the salad and toss lightly.
