Muy Bueno Enchilladas

Ingredients

    1 lb ground turkey
    1 cup sour cream, light
    3 cups shredded cheddar cheese
    1 cup salsa
    1 cup enchilada sauce
    32 tortillas

Directions

I have a big family (including 3 teenagers) so I make large meals sometimes. We always have leftovers of this but it's great for my husband to take the next day for lunch at work, with still a few for my teenaged son 'snack' on at night.

If you want to make the recipe you can easily half it by using half the ingredients. Enjoy!

Preheat oven to 350F

Brown and drain turkey. On low heat, add sour cream to turkey until mixture appears milky. Add salsa and 1 cup cheese, continue to heat over low heat. Prepare enchilada sauce.

In a 13x9-inch pan, lay one tortilla. Spoon on enough enchilada sauce to cover, then fold tortilla over and repeat. Spoon approx. 2-3 tsp meat mixture onto center of tortilla. Fold in half lengthwise, then roll. Lay enchiladas in pan seam side down and sides touching,. Repeat process until all tortillas are filled. Spread remaining cheese over remaining enchiladas. Bake until cheese is melted and bubbly, 5-8 minutes. Cut like a casserole and serve.
