Number of Servings: 4

Ingredients

    1 tbsp olive oil
    1 carrot cut into thin coins
    1 med onion
    2 tsp chopped garlic
    1 celery stalk chopped
    1 lb boneless chicken breast
    1 (14 1/2 oz) can crushed tomatoes with basil, oregano and garlic
    4 tsp grated parmesean cheese
    1 tbsp basil
    1/2 tsp salt
    1/4 tsp black pepper

Directions

Heat oil in large skillet. Saute veggies until softened (about 10 mins)
Add chicken strips. Cook until opaque (about 5 mins) Stir in remaining ingredients and cover.
Simmer for 10 mins, until flavors blend.

Serve over pasta.
