Farmhouse Lentil Stew

Introduction

This is a good cleaning ou the fridge recipes as any vegies can be thrown in. This is a good cleaning ou the fridge recipes as any vegies can be thrown in.
Number of Servings: 10

Ingredients

    2 medium onions diced,
    3 tsp crushed garlic
    1.5 tblsp olive oil
    375g red lentils
    8 cups water
    4tsp Massel chicken stock powder
    880g can diced or crushed tomatoes
    2 large potatoes, diced
    3 larges carrots, sliced or diced
    1 cup frozen peas

Directions

Heat olive oil in large stock pot. saute onion and garlic until onion is transparent. Add red lentil and stir coating them in the oil.
add remaining ingredients and bring to boil. reduce heat and simmer until vegies are tender, about 40 minutes.
Serves 8
The vegetables can be subsituted with other veggies depending on what you have in the fridge.
