* Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb
* *Extra Virgin Olive Oil, 3 tbsp
* Pepper, red or cayenne, 1 tbsp
* Garlic, 2 tsp
* Pepper, black, 1 tbsp
* Onions, raw, 1 tbsp chopped
slice a large eggplant in thickish slices width-wise and place in casserole dish or ceramic baking pan. Drizzle with some of the oil, then sprinkle spices, then layer remaining slices on top, drizzle the rest of the oil and spices. on top.
Bake til golden.
