IntroductionA great dish that and easy and very yummy. A great dish that and easy and very yummy.
2 boneless skinless chicken breasts
1 cup minute rice or minute brown rice
1 10oz package of frozen broccoli
2 tsp minced garlic
1 can Campbell's Broccoli Cheese Soup 98% fat free or Campbell's Cream of Chicken soup Healthy Request
1/3 cup skim milk
4 oz velveeta 50% less fat
2 tbs bread crumbs
Cook Rice according to directions on box. Add the 4oz of cheese to rice and stir till melted.
Cook broccoli according to directions and drain.
Cut up chicken into bite size pieces and put into skillet with chopped onion, garlic and salt and pepper to taste. Cook until no longer pink.
In a 2 qt. baking dish. Place rice in dish with broccoli on top and then add the chicken mixture.
Stir milk and soup together and pour over entire dish. Sprinkle bread crumbs on top and bake for 20min or until hot and bubbley.
