Introduction

My son made this appetizer for Mother's Day. I entered it to figure out how much I would pay for indulging in this rich treat. I was surprised to find out that a 1/4 cup serving was not as bad as I thought! Use nonfat ingredients and this would be a pretty darn healthy appetizer! My son made this appetizer for Mother's Day. Ingredients

    Bacon, 3 medium slices, cooked & crumbled
    Mayonnaise, regular (mayo), 2/3 C)
    Low fat cream cheese, two 8 oz pkgs
    Parmesan Cheese, grated, .2/3 C
    Spinach, frozen, 2 package (10 oz) yields
    Jalapeno Peppers, 2/3 cup, sliced

Directions

Brown bacon and crumble. Mix Mayonnaise, cream cheese and parmesan cheese in a bowl. Fold in drained spinach, bacon and jalapeno's. Bake at 350 about 30 minutes or until bubbling and golden brown on top. Most guests ate this with tortilla chips, but this is very good with sliced carrot chips!!
