Introduction

Heat oil in large non-stick skillet or saucepan. Ad garlic, onion, carrot, celery, basil and oregano and saute for 5 minuites.
Stir in beans, tomatoes, and pepper. Cover and continue cooking over medium heat for about 20 minutes or until carrots are tender.
Add cheese and rice and continue stirring until mixture is heated through.
Yield 4 servings.

Ingredients

    1 tsp. vegetable oil
    1 clove garlic, chopped
    1 medium onion, diced
    1 medium carrot, diced
    1 medium celery stalk, diced
    1 tbsp. dried basil
    1 1/2 tsp dried oregano
    1 can (19 oz.) red kidney beans, drained and rinsed
    1 can (19 oz) tomatoes, drained and chopped
    salt and pepper to taste
    1/2 cup grated low fat cheddar chees
    3 cups cooked brown rice

    Note: To use fresh tomatoes instead of canned: Peel and chop 3 large, ripe tomatoes and simmer with the other ingredients.
