Poppy Seed Bread

Number of Servings: 16

Ingredients

    1/2 cup reduced fat sour cream
    1 cup egg substitute
    1/2 cup sherry
    1/3 cup poppy seeds
    1/2 cup canola oil
    1 pkg instant fat free, sugar free vanilla pudding
    1 pkg yellow cake mix

Directions

1. Mix all ingredients together using the minutes required by the cake mix instructions. Pour batter into sprayed loaf pans (2/3 full).
2. Back at 375 degrees for 35-40 minutes or until inserted toothpick to the center comes out clean.

Makes 16 servings.

  • This was a wonderful substitution for muffins. I made it with lemon pudding and cake mix instead of the vanilla and had lemon poppy bread and didn't feel one bit guilty! You can change ANY of the flavors to make: Orange/Cranberry; Blueberry; Choc Chip; Banana Nut breads. Sub yogurt for sour-cream. - 5/21/07
